Like many of you, we find ourselves missing the company of friends and family when we gather at our tasting room to share a glass of wine and some tasty appetizers. Over the coming weeks, we hope to share some easy recipes that are similar to the dishes we serve at Enchantment Vineyards in Portales, starting with a favorite: spinach artichoke dip! This flexible recipe gives you options for substitutions, including frozen spinach or canned artichoke hearts, but we suggest experimenting based on the availability of fresh produce where you live. If you choose to use fresh artichokes or spinach, steam and blanch them respectively and give them a bit of time to drain to remove excess moisture.
Ingredients
  • 2 cups parmesan cheese
  • 10 ozs frozen chopped spinach (thawed and drained, or blanch fresh spinach if you have it)
  • 14 ozs canned artichoke hearts, drained and chopped
  • 2/3 cup sour cream
  • 1 cup cream cheese
  • 1/3 cup mayonnaise
Directions

Begin by preheating your oven to 375°F, then mix your parmesan cheese, spinach, and artichoke hearts in a bowl. Add the rest of the remaining ingredients and put in a greased glass or ceramic baking dish, then bake for 20 to 30 minutes, allowing the top to become golden brown.

Perhaps the best thing about this dish is its flexibility in serving. Go the easy route and serve it with your favorite tortilla chips, or get creative and use anything from pita bread, Naan, or even a baguette. You can also use the dip as a filling in paninis or on homemade pizza.
